Teriyaki-Style Burgers & Sesame-Ginger Slaw

Ingredients
1 package Abbot’s Whole Burger
Extra virgin olive oil, for cooking
2 burger buns
2 pineapple rings
¼ cup soy-free teriyaki sauce (we love Primal Kitchen’s)
2 tablespoons vegan mayonnaise
Sesame Ginger Slaw (below)
For the sesame-ginger slaw
Dressing
¼ cup rice vinegar
2 tablespoons maple syrup
1 tablespoon sesame oil
1 tablespoon fresh ginger, peeled and finely grated
1 teaspoon kosher salt
1/2 teaspoon black pepper
Slaw
1 1/2 cups finely shredded red cabbage
1 1/2 cups finely shredded green cabbage
1/2 cup shredded carrots
1/4 cup chopped cilantro
4 medium scallions, thinly sliced
2 tablespoons white sesame seeds
Description
A crunchy, immunity-boosting slaw makes for the perfect topping (and side) to a zesty, bold, and nutrient-dense burger. Double or triple up on the recipe and recreate for your next backyard barbeque; it’s truly a crowd-pleaser.
Method
Make the slaw. In a small bowl, whisk together the slaw dressing ingredients.
In a large bowl, add the cabbage, carrots, cilantro, scallions, and sesame seeds. Pour on the dressing and toss well. Set aside.
Cook the burger patties according to the package instructions.
Assemble the burgers. Spread a tablespoon of mayonnaise on the bottom of each bun. Add the cooked patty, then pour on a drizzle of teriyaki sauce. Add a slice of pineapple, ½ cup of the sesame ginger slaw, and top with the bun. Serve with more slaw on the side. Enjoy!
